What's Cooking Wednesday - Issue 13: A Steaming Pile of...



PANCAKES!! But of course, it's Shrove Tuesday. The kids *love* pancakes for dinner. Addison ate her weight I think (a total of 4 whole pancakes). She out-ate her brothers!

Anyway, here's the recipe and as usual, please check out the others at What's Cooking Wednesday (yes, I'm a day early!).

Apple Pancakes

Ingredients:
2 cups flour (I used 1 white and 1 whole wheat)
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1 teaspoon cinnamon (or more if you want)
2 beaten eggs
1 1/2 cups milk
2 tablespoons melted butter
1 cup chopped apple (I shredded mine, skins and all)

Preheat Griddle to 300˚

Sift dry ingredients together.
Combine eggs, butter, and milk.
Pour into flour mixture and stir until smooth.
Add apples and stir.
Drop by spoonfuls and cook.

Quin's Bday



I was a little more low key this year (you remember Addison's cupcake pops). Quin turned 4 and I said cake mix and store bought icing it is!! We made little cupcakes and Quin was totally freaked out by the sparklers. Craig and I collaborated on a birthday card (you will note Craig's wonderful sense of humour!).

What's Cooking Wednesday-Issue 12

Okay, it's actually Thursday and it's not really a recipe but I wanted to show off my new birthday mug with a frothy hot chocolate. Yum! Craig bought me a frother for Christmas and man, does is make a mean cocoa!

The Ingredients

Hot milk
Camino Organic and Fair Trade Dark Hot Chocolate

The Recipe

Add mix to milk. Heat in pot on stove or microwave. Transfer to mug. Froth it. Sip and mellow.
Ahhhhhh.

February Blahs

I think that I shouldn't be allowed to complain about February as it's my birth month (and Quinten's too!) but I'm suffering from the winter blahs. I'm completely overwhelmed with the amount of freelance I have to do, I'm trying to keep the house in order for the this birthday weekend, trying to avoid propping the kids in front to the television, trying to get all my tax stuff in order... and all I want to do is curl up on the and watch "How I Met Your Mother" (which is the funnest thing I've seen in years... like Friends and Seinfeld only 'awesomer' [imaginary high-five Barney style]). I have 14 projects on my design to do list and 5 of them are due in the next week. Yikes!!

Anyway, I'll start posting pics of what I've been doing (when I get a spare minute) and I will update after Quinten's birthday (he wants white cupcakes with white icing that he can decorate with sprinkles. Yum).
